White Blend

Crafted by a careful selection from more than 45 separate vineyards and 90 different wine lots, only 14 small lots of Chardonnay and Pinot Noir met the high quality standards of DVX in 2000. These selected lots were kept separate during initial fermentation in order to highlight their vineyard differences and make the most of their specific strengths, for a final blend of power and harmony. In appearance, the wine has a brilliant golden yellow color, with a mesmerizing stream of tiny bubbles rising to a persistent crown of white mousse. The rich and complex aromas are accentuated by the natural ripeness of our grapes with hints of red apple, wild strawberries, golden apple, dried apricot, jasmine, acacia blossoms, as well as spicy tones of roasted nuts, white chocolate and honeysuckle. On the palate, it is an explosion of white and red berry flavors, with creamy layers of fresh fig, white cherry, vanilla beans, underlined by a refreshing acidity. The long lasting finish is dominated by biscuit, toast and nutty flavors is an open invitation to unending hedonistic delight. Food Pairing Perfect on its own as an evening starter, it will also be a perfect match a wide selection of foods, from wild mushroom risotto to roasted duck or densely flavored game food dishes.
