The Zinfandel used to produce our port comes from the top of our main Zin block where the soil is the thinnest and an earlier harvest is standard. This ensures good flavor ripeness at a time when the acidity is still quite high, something desirable in a wine with high finished alcohol and sugar. The grapes are destemmed to open-top bins and begin fermentation spontaneously. When the fermentation has progressed to close to the desired finished residual sugar, it is stopped by the addition of high-proof brandy that was custom-made for us from our own sangiovese wine. The grapes are allowed to steep for another week before pressing to used barrels.
