Last Fall we decided to try a new wine from a familiar grape. We made 117 cases of Cabernet/Merlot Rose, not knowing what we would have when we completed the project. It turns out that is both beautiful and delicious. Below you will find the tasting notes of the winemaker. Our 2005 Rose is a refreshing dry wine made from our Estate Cabernet Sauvignon and Merlot Grapes. Immediately after pick the grapes were brought into the winery, crushed and destemmed. Next we cold soaked the crushed must for 30 hours before we began cold fermentation. The 2005 Rose has a lovely pink hue and perfume of rose petals and fresh strawberries. The palate has flavors of black cherry, raspberry and vibrant acidity.
