This is what the Veronese call Recioto, a sweet red wine made from dried grapes. Our methods for drying have ranged from wind tunnels in Gilroy used to dry garlic, to platforms in our parking lot. We have recently settled upon picking the grapes into raisin trays and leaving them to dry in the vineyard. These grapes come from our Ca' del Solo Vineyard. Concentration has never been in short supply for grapes issuing from this property. A barbera normale from CDS is unfailingly inky and sappy, a walk on the lurid side through Beelzebub's blackberry patch. When this character is concentrated, all elements vector in on the universal, molten cassis.
