There is great depth to this very pale wine which surpasses even the Vin Gris de Cigare or another Pink Wine recently seen hanging around the House. This is not to suggest the wine is bombastic or assertive. Its presence is quiet and subtle—a still water which runs very, very deep, the features of which are revealed only upon close inspection. The initial perfume of rosehips and dried herbs wanders on towards the light scent of strawberry, giving way to orange or tangerine rind only to meander on to some more distant quadrant of the aroma wheel. One might expect a wild salmon to swim very far upstream to accompany such a wine to the Promised Land.
