Our pigato has become as stylish and curvaceous as an Italian diva. Light, demure aromas of fresh-cut grass, ripe nectarines, linden blossoms, acacia honey and a twist of lemon ease into an assertive richness in the mouth, courtesy of 12 hours of skin contact and fermentation via indigenous. Full flavors are expressed as tart apples, pineapple, peaches, and minerals, and there is a pleasant salinity that belongs more to the texture than the taste, a quality we find in a number of the wines from our Ca' del Solo Vineyard. A wine begging to accompany the freshest of fish, it will also pair nicely with dishes starring green herbs or fresh vegetables.
