Inspired by a group of Italian winemakers known as the "Pazzi," we fermented this white wine on its skins. Properly managed, this unorthodox technique produces utterly distinctive, convention wisdom-defying white wines. Immediately you will notice the golden color, the mark of a white wine rich in phenols. The perfume is quite striking for chardonnay, similar to that found in a moderately aromatic variety such as roussanne or Alsatian pinot gris – an enticingly heady suggestion of caramel apple, nectarine and almond. The "Pazzo" craves creamy, buttery cuisine—the best and worst that Escoffier could throw at it.
