For those still nursing wounds from juvenile exploits with, Riunite or Crackling Chablis, do not allow the denomination "Spumante" to induce paroxysms of nausea and shame. This is a very serious méthode champenoise sparkling wine, having spent 4 years on lees. The rewards of this extended aging are well evident. The wine enjoys a combination of great depth, and subtle delineation of flavor. The flavor profile is very different from Champagne – there is a greater suggestion of white flower and mint than one would find in the widow Clicquot's foo-foo perfume, though the familiar biscuity tones, and fine, persistent bead are apparent in spades.
