This dolcetto—raised within the biodynamically benevolent confines of our own vineyard - is, if we may speak candidly, a massive and monstrously delicious wine – more the monster than Le Monstre itself - yet it still manages to be quite pretty and aromatic. We have been conducting various experiments with the red Piemontese varieties in Soledad (drying them partially, drying them completely, blending them, ripasso, etc...), to find out just what they do best. Here we have merely cropped the vines at a very modest level, somewhere in the area of 2 tons/acre. This extremely low yield produced grapes of intense concentration.
