To retain the Gewurztraminer’s delicate balance of aromas and flavors, Beringer’s winemakers use the traditional technique of a long, cool fermentation. Immediately following crush, the must (grapes and skins) is chilled. Temperatures are kept cool throughout fermentation and just before the wine reaches dryness, winemakers bring it down even further, capturing the fresh white peach and fragrant honey character. The resulting wine has heady aromas of citrus and orange blossom leading in to rich flavors of stonefruit and spice.
