cold arrested fermentation for 5 days, natural start-up of fermentation using indigenous yeast at 17°C, temperature control during the entire 20 days fermentation (not exceeding 29°C in the must), and malolactic fermentation in new French oak barrels, aged for 12 months. A very elegant, suave wine with beautiful fruity textures, smooth and subtle.
