A Vin de Pays d'Oc made from over-ripe Muscat grapes - the successful outcome of a unique experiment with new approaches from start to finish
resulting in a thoroughly unusual wine. Obviously, we have followed the best possible practice at every stage to produce a magical result. Maceration on the grape skins for between 12 and 48 hours, depending on the characteristics of the harvest. Left to settle in cool conditions, the temperature of the juice is gently raised; once fermentation is under way, it is transferred to 60-gallon (225 litres) casks. These are made with wood of a specific thickeness; the wine matures on its lees under strict temperature control. The result is lower residual sugar than the usual Vin Doux Naturels (70 grams/litre). Tasting reveals a concentrated wine which, in spite of its power, is unusually elegant. Exceedingly aromatic and tasting strongly of Muscat, but with added hints of coconut and vanilla due to its time in wood, with definite nuances of dried fruit, plums, jasmine, even lime blossom. To sum up, its enormously complex nose is refiected in the mouth. It's a thoroughly sophisticated wine with a perfect balance between finesse and vivacity.
