The Domaine de Fenouillet «Grande Réserve», AOC Faugères (Burgundy "sommelier" bottles, packed in wooden cases of six): meticulously selected from typical Faugères land parcels, some vines stretch down the slopes, others are planted parallel to the hillsides. The predominant Syrah is hand picked and vinified by the carbonic maceration process. Some Carignan adds structure whilst its characteristic spice and vigour complement it wonderfully. Matured in large vats, the wine is bottled a year or so after the harvest to ensure it retains its lively freshness. On the eye, it's a deep ruby red. An expressive nose gives out aromas of violet and liquorice, hints of redcurrant and crushed raspberry together with spices such as vanilla and cinnamon. In the mouth, it is powerful, with well-balanced tannins, long aromatic length and hints of the same aromas so present on the nose. It ends on a definite note of liquorice. This is a complex wine, a first class drink with game, stews, or meat grilled with rosemary, fennel and thyme - the herbs of its native "garrigue".
